JASM is happy to present this limited, brand new event. Participate and enjoy the chance to learn from the head chef of one of the hottest Japanese restaurants in the Twin Cities, Shigeyuki Furukawa. By taking advantage of this opportunity, you will gain culinary skills, insight into Japanese cuisine, the importance of dashi and how to make it.

It’s important to note that this event will have a very limited number of spots available. JASM will take care of the registration. (20 attendees max)

Chef Furukawa is the Co-Founder, Chef, and Owner of Kado No Mise and Kaiseki Furukawa. Kaiseki Furukawa is the first restaurant in Minneapolis to offer the traditional Japanese kaiseki experience — meaning a set menu of many small courses, presented in sequence — from Furukawa, who learned the technique while cooking in his native Tokyo and Kyoto, Japan.

Dashi is an essential piece of Japanese cuisine that functions as the quintessential soup stock for popular Japanese dishes such as Miso soup and various noodle broths.

This class will focus on how to make dashi using traditional ingredients and techniques.

The demonstration will further go in depth comparing the differences between dashi from scratch and ready-made. Participants will learn how to make Miso soup using dashi.

After the class, the class attendees are welcome to stay at the restaurant to have dinner. The dinner will not be included with the purchase of a ticket, but the chef will add one extra item to your dinner using the dashi he made for the class.
